Raspberry Bars

These Raspberry Bars are one of my favorite. When I was younger my aunt used to make them for me. I didn't have the recipe, but was keen on finding the recipe that most resembles the flavor that I remember. After many tries I found this one to be the most simple, and delicious. It is adapted from Land O'Lakes. These "Old-World Raspberry Bars" had me by the name. They are so worth the try.

Raspberry Bars
*Note: I use cold cubed butter, and use my hand to mix. I also add 1/2 tsp. of cinnamon. Only because I love the spice, and it really does give a nice flavor to the dough. You can add up to 18oz of preserve, if you like...but I stick to the recommended amount. Try any flavor you like. You can't go wrong here.


Pre-heat oven 350F. Line an 8" square pan with parchment paper.

Ingredients
Crumble Topping
2 1/4 Cups Flour
1 Cup Sugar
1 Cup (2 sticks) Butter, cubed
1 Cup Pecans, finely chopped
1 Egg
1/2 tsp. Cinnamon (optional)

Filling
3/4 Cup Raspberry Preserve

Directions
1. Combine all the crumble topping ingredients together in a medium size mixing bowl.
2. With fingers combine until crumbly.
*Note: You don't want to work the ingredients too much...mix just enough for the ingredients to come together.
3. Reserve about 2 cups of the mixture, and set aside for the top layer.
4. Place the rest of the dough in an 8" square pan, and pat down lightly.
5. Top the dough with the preserve of your choice.
*Note: Stay at least 1/2" from the sides.
6. With your fingers crumble the rest of the dough topping the preserve.
7. Bake in a 350 degree oven 40-50 Until golden. Cool on rack.
8. Enjoy!

FINALLY!!!

Well...I am finally a blogger! For the longest time, all I hear from the people around me, "Rana, you need to start your own blog!", "Rana, you really need to share these recipes with people on a blog.", or "Rana, start a blog already!"...Well guys, here I am. I am so excited to be here. Hopefully, I will be able to navigate my way around :/ I will post recipes soon, in the meantime, enjoy the pictures.
