Sweet Potato Pie
I do NOT like pumpkin pie...But I LOVE this pie. This is my favorite holiday pie! It is the number one item I sell around the holidays...And I sell a lot of them. It is absolutely delicious, easy to make and leaves a wonderful aroma in the kitchen.
I like making my own pie crust, but when I have 30 orders or so...it ain't happenin! The recipe I posted calls for store bought. However, feel free to make your own.
*I normally use 3 large sweet potatoes. I score the potatoes (do not peal) wrap them together in foil add 3 Tbs. of butter, place them in the oven for approximately 45 min.-1 hour. You will get this caramelized crust on your potato that makes a big difference in your pie.
Ingredients;
2 Cups Sweet Potatoes, mashed
1/3 Cup Butter, room temperature
1 1/2 Cups Brown Sugar
1/2 Cup Sugar
2 tsp. Cinnamon
1 tsp. Vanilla
6 Oz. small can Evaporated Milk
3 Large Eggs, beaten
Cinnamon cream for serving (1/2 of cinnamon in whip cream.)
Directions:
- Preheat oven to 350F.
- Mix together butter, sugars and cinnamon until creamy.
- Add potatoes, evaporated milk, vanilla and eggs, combine well.
- Pour the batter into pie crusts. *I normally wrap the edges with foil so the crust does not burn. I remove the foil the last 5 minutes or so of the baking process and let it can brown.
- Bake for 45-1 hour. Enjoy!
