Stuffed Mushrooms

Stuffed Mushrooms

If you know me, you know that I enjoy little foods such as tapas or appetizers. Little bites with great flavors, what more can you ask for? I have a big family. When I say big, I mean BIG!!! When we all get together my job is pretty much desserts and appetizers...My two favorite things, so no complaining here.
Stuffed mushrooms are one of the most popular items. These button mushrooms can be stuffed with what your heart desires. In the following recipe I used chicken as the main ingredient, but most times I make a spinach and artichoke dip filling, which is absolutely delicious.

Ingredients;
Filling:
  • 20-25 Mushrooms, stemmed
  • 2 Chicken breast, cut small pieces
  •  1/3 Cup Oil
  • 4 Cloves Garlic
  • 1 Green Bell Pepper, small dice
  • 1/2 Onion, small dice
  • 1 1/2 Tbsp. Italian Herbs
  • 1 Tbsp. Parsley, finely chopped
  • 1 tsp. Black Pepper
  • 1/4 Cup Bread Crumbs
  • 4 Oz. Cream Cheese, room temperature
  • 1/4 Tbsp. Mayonnaise
  • 1/4 Cup Parmesan Cheese
Topping:
 Combine the following ingredients in a bowl and set aside.
  • 1/2 Cup Bread Crumbs
  • 1/4 Cup Parmesan Cheese
  • 2 tsp. Italian Herbs
  • 1/2 tsp. Black PepperDirections;
  1. Line a baking sheet with parchment paper, and set oven temperature at 350 F.
  2. In a saute pan, cook the cut chicken in oil.
  3. Add the spices and the vegetables until the vegetables are translucent.
  4. Transfer the ingredients to a processor and pulse a few times.
  5. Add the cheeses and mayonnaise.
  6. pulse until all ingredients are well combined. *(If you see that the mixture needs to be moistened add a little more mayonnaise.)
  7. Fill a piping bag with the filling or use a teaspoon to fill the mushrooms with the filling.
  8. Place the mushrooms on the baking sheet close in proximity.
  9. Cook 15-20 minutes...Enjoy!
